1 cup Quinoa
4 cups unsweetened coconut milk
⅓ cup maple syrup
1 ½ tsp vanilla
1 tsp cinnamon
¼ tsp salt
Rinse quinoa and drain
In medium saucepan combine all ingredients, bring to a boil over medium heat. reduce heat and simmer about 25 minutes, stirring every 5 minutes until the pudding has thickened and most of the milk has been absorbed.
Remove from heat and cool before serving.
